Blueberry Basil Bruschetta 

Ingredients (serves 2):



Place the slices of bread in a toaster or under your oven’s broiler until crisp and lightly browned on both sides. Place the slices on two warm plates.

Slice the blueberries in half and add to a mixing bowl.

Chop the basil finely and add to the bowl of blueberries. Mix them together roughly using your hands.

Divide the mixture between the toasted bread, heaping some on each slice.

Drizzle the olive oil and vinegar over the slices, and season to taste with salt and pepper.
